Skinny Alfredo and Buffalo Alfredo Baked Chicken Rollups

Ingredients:

Skinny Alfredo Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups 2% milk, or more, as needed
  • 2 tablespoons heavy cream
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 ounces fat free cream cheese/greek yogurt mix
  • 1/4 cup freshly grated Parmesan cheese
  • garlic salt and freshly ground black pepper
  • 2 tablespoons parsley
  • 2 strips bacon
  • 1/4 cup buffalo wing sauce (optional)

Chicken:

  • 4 pieces chicken breast or thighs
  • garlic salt and pepper
  • 1 – 2 ounces mozzarella cheese, cut into strips

Instructions:

Skinny Alfredo Sauce:

  1. preheat oven to 375 degrees
  2. melt butter in a saucepan over medium heat and whisk in flour until lightly browned, about 1 minute
  3. whisk in milk, and cook, whisking constantly, until incorporated, about 1-2 minutes
  4. stir in heavy cream, garlic powder, onion powder, garlic salt, and ground black pepper until slightly thickened, about 1 minute
  5. stir in parmesan and cream cheeses until melted, about 1-2 minutes
  6. add more milk if needed to thin sauce
  7. mix in parsley
  8. fry bacon and crumble into sauce, then set aside
  9. if making buffalo alfredo sauce then add hot sauce into alfredo sauce

Chicken:

  1. Pound chicken flat
  2. season both sides with garlic salt and pepper
  3. put one strip mozzarella on one side of chicken and roll up, repeat with other pieces of chicken
  4. pour 1.5 cups of alfredo sauce into bottom of pan
  5. put chicken in pan (use a pan that is small enough that chicken will fit snugly into pan and not spaced out too far apart)
  6. top with additional sauce and rest of mozzarella cheese (shredded)
  7. bake for 35-40 minutes
  8. serve with a side of salad or fettucine or angel hair pasta
