Chicken & Creamy Kale & Corn with Orzo

Ingredients:

Chicken:

  • 1 chicken breast
  • garlic salt & ground pepper
  • 1 tbsp canola oil or ghee

Creamy Kale & Corn Orzo:

  • 1/2 onion, chopped
  • 4 cloves garlic, chopped
  • 1.4 tbsp ghee or butter
  • 1.5 cups chopped kale
  • 1 tbsp flour
  • 1/2 cup orzo
  • 1.5 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1/2 cup frozen corn
  • garlic salt & ground black pepper
  • 1 teaspoon garlic salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons flour
  • 1/4 cup vegetable or canola oil

Instructions:

Chicken:

  1. Flatten chicken breast with bottom of a cup or meat tenderizer.
  2. Season both sides of chicken with garlic salt and pepper
  3. Heat ghee or oil in a pan over medium heat.
  4. Cook chicken over medium heat for about 4 minutes per side.
  5. Let chicken cool down for 2 minutes then cut it into strips.

Creamy Kale & Corn Orzo:

  1. Add 1 cup chicken broth and 1/2 cup orzo pasta and cook according to package instructions.
  2. Separately heat ghee in a saucepan over medium heat. Add garlic and onion, and season with garlic salt and pepper and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
  3. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in 1/2 cup whipping cream and 1/2 cup broth, whisking constantly, until slightly thickened, about 3-4 minutes.
  4. Add frozen corn and chopped kale and cook until soft, about 3-5 minutes.
  5. Stir in orzo and gently toss to combine.
  6. Top with chicken and enjoy!

    • Let me know how it turns out! I always forget about my frozen corn so I try to throw it in the pan whenever I remember to and I’m never disappointed!
