- 1/3 of a sweet potato
- 1/4 of an onion, diced
- 1/2 tablespoon vegetable oil
- salt and pepper
- 1 ounce pastrami
- 1 egg
- ketchup (optional)
- boil the sweet potato in salted water for 7 minutes and then drain water
- sauté onion over medium-low heat for 2 minutes then add boiled sweet potatoes and pastrami and season with salt and pepper and sauté over medium heat for an additional 5 minutes and plate
- fry egg and place on top of sweet potato hash and enjoy!
