Sweet Potato and Pastrami Breakfast Hash w/ Eggs

Sweet Potato HashPodcast Recommendation:

Servings: 1

Prep Time: 10 minutes | Cook Time: 10 minutes


  • 1/3 of a sweet potato
  • 1/4 of an onion, diced
  • 1/2 tablespoon vegetable oil
  • salt and pepper
  • 1 ounce pastrami
  • 1 egg
  • ketchup (optional)


  1. boil the sweet potato in salted water for 7 minutes and then drain water
  2. sauté onion over medium-low heat for 2 minutes then add boiled sweet potatoes and pastrami and season with salt and pepper and sauté over medium heat for an additional 5 minutes and plate
  3. fry egg and place on top of sweet potato hash and enjoy!
