Zucchini Sausage Soup

  • 1 onion, diced
  • 3 zucchinis, diced
  • 3 cloves garlic, diced
  • 2.5 cups chicken broth
  • 2 hot sausages, divided and flattened into quarter-sized pieces
  • garlic salt
  • ground black pepper
  • garlic powder
  • 1/4 cup shredded parmesan cheese
  • tabasco (optional)


  1. sauté zucchini, onion and garlic in a large pot over medium-low heat for 10 minutes
  2. add broth, bring to a boil then lower, cover, and simmer until tender, about 20 minutes
  3. remove from heat and purée with an immersion blender
  4. while veggies are cooking, fry the hot sausage pieces about 3-4 minutes per side
  5. add sausage pieces to soup and simmer for 1-2 more minutes
  6. ladle soup into bowl and add cheese/tabasco/sausage fat from the pan and serve!
