Chorizo Goat Cheese Mini-Quiches

Servings: 19 quiches


  • 2 premade pie crusts
  • spray oil
  • 4 ounces soft goat cheese
  • 1 teaspoon olive oil
  • 11 oz Mexican chorizo, casings removed and cooked
  • 3/4-1 cup shredded Mexican cheese
  • 4 scallions, thinly sliced
  • 4 large eggs
  • garlic salt, pepper
  • 1/2 cup half & half
  • 1 cup heavy cream


  1. preheat oven to 350 F
  2. stick goat cheese log into freezer (this helps with cutting it into smaller pieces later)
  3. roll out pie crust. use a tumbler glass to cut circles out of the pie crust. further flatten with fingers or with roller
  4. spray oil into muffin tin to prevent sticking
  5. put each circular pie crust into the muffin tin
  6. once all muffin tins have pie crust laid inside, layer the cheese, chorizo, then scallions into each pie crust
  7. separately mix four eggs, garlic salt and pepper, half & half, and heavy cream
  8. spoon egg mixture over the cheese, chorizo, and scallions
  9. take goat cheese out of the freezer and cut into small pieces
  10. spread goat cheese pieces on top of egg evenly between all quiches
  11. bake in oven for 20-25 minutes
