Chocolate Mousse w/ Banana and Pecans

Prep Time: 10 minutes

Cook Time: 30 min. cool time


  • 3/4 heavy cream
  • 1/8-1/4 cup sugar or sugar substitute, depending on sweetness preference
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder


  1. whip cream with electric mixer for ~5 minutes, until more solid than liquid
  2. add sugar and continue to mix
  3. add vanilla and cocoa powder, beat until almost stiff
  4. scrape contents of bowl down and mix again
  5. layer in bowl(s) with banana slices and chopped pecans
  6. refrigerate for at least 30 minutes
