Kitchen Sink (Date, Banana Chips, Peanut Butter, Almond, Chocolate Chips) Granola

Serving Size: 8 bars

Prep Time: 25 minutes

Cook Time: 1 hr cooling time

Ingredients:

  • 1.5 cups dry oats
  • 3/4 cup peanut or almond butter
  • 1 cup pitted dates
  • 3/4-1 cup chopped almonds (hand-chopped or pulsed food processor)
  • 1/2 cup banana chips (hand-chopped or pulsed food processor)
  • 1/4 cup chocolate chips
  • parchment paper
  • 1/2 cup honey (optional, see note at the end)

Instructions:

  1. spread oats out on cookie sheet and toast in oven at 350 for 15 minutes
  2. process dates in food processor for 1-2 minutes until it has a paste-like consistency
  3. process almonds in food processor (just to chop; 3-6 pulses)
  4. mix date paste, oats, and chopped almonds
  5. microwave peanut butter for 30-45 seconds
  6. add warm peanut butter into oat mixture, mixing well with your hands
  7. add in banana chips and then chocolate chips
  8. place parchment paper in loaf pan (or other pan for molding the granola into bars); if not making into bars then just flatten in bowl, pop it in the fridge for an hour, and break it up later
  9. put oat mixture into parchment paper-lined loaf pan and push down/smooth out
  10. pop it in the fridge for an hour or more and then take the parchment paper out of the loaf pan, cut oat loaf into bars, and then individually wrap or put entire thing back into loaf pan to refrigerate until ready to eat

Note: This will hold together better if you add 1/2 cup honey along with the peanut butter but you may omit for a more crumbly granola is trying to avoid the added sugar.
