Bacon Spinach Frittata


Prep Time: 10 minutes | Cook Time: 10 minutes

Serving Size: 1-2 people (keep in mind cooking times may be longer for a larger pan)


  • 2 eggs
  • 1/2 cup spinach
  • 2 slices bacon
  • oven-safe skillet (mine is a 6″ cast iron from World Market)
  • optional: goat cheese/shredded cheddar cheese


  1. turn oven broiler on
  2. cook bacon in normal-sized pan and leave 1/4 of the grease in the pan, reserving the rest. set bacon aside to cool
  3. while bacon is cooking, whisk eggs together and set aside
  4. once bacon is done cooking and grease is separated according to step 1, add spinach in and cook on medium low for a minute. make sure to coat the spinach in the bacon grease while cooking
  5. if using different pan for the oven, add some reserved bacon grease and coat inside of the entire pan (use hands or a paper towel)
  6. chop of hand-crumble bacon
  7. heat pan from step 5 on the stove with medium-low heat and whisked eggs
  8. add spinach and bacon pieces (and cheese, if using)
  9. cook on medium-low heat for 3-4 minutes, turning heat down if eggs are browning on the side. take pan off once sides seem firmed up (but center will still be very liquidy)
  10. put pan into lower-middle rack in oven and broil an additional 3-4 minutes and then it’s ready to eat! if desired, can add hot sauce or parsley to garnish.
