Zucchini Mushroom Gratin


Prep Time: 10 minutes | Cook Time: 20 minutes

Serving Size: 2 people


  • 1 zucchini, thinly sliced
  • 4-5 whole mushrooms, thinly sliced
  • 2 tablespoons butter + a dab extra butter for buttering the baking dish
  • 1 tablespoon flour (or 1/2 tablespoon coconut flour)
  • 1/2 cup cheddar or mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded


  1. preheat the oven to 375 degrees
  2. butter the baking dish
  3. create a layer by alternating the zucchini and mushroom around the outer edge of the baking dish and ending in the center
  4. put all of shredded cheddar/mozzarella and 2/3 of parmesan on top of vegetables
  5. heat butter in saucepan over medium-low heat; once butter is melted add flour in and stir (like a roux for a chowder)
  6. pour the butter/flour mixture evenly over the cheese
  7. top with remaining parmesan cheese and bake in the oven for 20 minutes
